What is Sourdough?
Sourdough Bread is made by fermenting dough with naturally occurring lactobacilli and wild yeast. It is the oldest form of breadmaking, dating to the Neolithic times 9100 years ago, although flatbreads have been discovered dating between 11-14000 years ago and in Australia and Asia they have found grindstones dating back 30,000 years. How’s that for some tangible history?
Our Sourdough Starter
Our sourdough starter is over 200-years old and came to us via a friends restaurant in Cardiff. Preserving all of this history is a big responsibility, but there’s no denying that it has great results. So much so that it won Best Sourdough in the West at the 2018 Craft Bakers Association Awards.
Sourdough vs Sourfaux
Commercial sourdough bread, especially that from commercial bakers and ‘tanning salons’ like supermarkets, has generally been baked with dried sourdough enzymes to give it that sourdough tang and commercial yeast is added in order to rush the bread through the industrial baking process. This bread is known as sourfaux and real bakers are campaigning to stop the abuse of our artisan traditions.
Depending on conditions our sourdough can be mild and creamy or it can be characteristically tangy. I aim for the easier-going mild and creamy sourdough flavour as it appeals to more people.
You can buy our award-winning sourdough in four different flavours – white, wholegrain, rye, or walnut and cranberry. We bake the white and wholegrain every day, with the rye, and walnut and cranberry bread available at markets and to order during the week. It does take three days from start to finish though so please bear this in mind when placing your order!
Can I freeze my sourdough bread?
Yes! Wrap the whole loaf tightly then when you go to thaw it that it in the wrapper, allowing the moisture to go back into the loaf, then remove from the wrapping and place in a hot oven for a few minutes to crisp the crust up again. It’ll be as good as the day it went into the freezer!
Alternatively you can slice it, bag it and freeze it then, when you’re ready, pop the frozen slices straight into the toaster. They’ll be toasted perfectly on the outside and still soft on the inside – perfect 🙂
